The distinguished mixologist Panos Bekiari signs the new concept BAR Stories by ARIA and aims to bring the aesthetics and experience of an upgraded cocktail bar to the Fine Catering space.
Among the significant new collaborations marking ARIA’s transition into a new era is the partnership with the acclaimed mixologist Panos Bekiari. Now in his 21st year in the hospitality industry, with 8 years of collaboration with the bar-restaurant Zurbaran in Kolonaki and Alemagou in Mykonos, this high-class mixologist now signs ARIA’s new bar concept.
Innovations introduced in this concept include a new exclusive category of open bars with special ice and premium drinks, three categories of open bars featuring old fashioned and signature cocktails, as well as themed bars such as Champagne party, G&T party, and Italian party.
The ritual of creation is what inspires him most in the art of cocktails: “For many, it seems simple, but creating a beautiful and tasty drink from an idea requires a lot of work. The selection of flavors, the form of each flavor, the technique, the glass in which it will be served, the garnish, even the name you give it. All of these function as a ritual. Naturally, the feeling when someone comes back and asks for the cocktail you created is magical.”
Modern bartending techniques ensure a high-standard result for him, impressive both in taste and appearance. Cooking methods, carbonation, clarity, unusual yet familiar flavors are the main ingredients of his modern creations, with a genuine character and identity.
